How I use leftover turkey

I am…making turkey soup.

The tradition in my family when we finish eating turkey is to start making soup. First cut all the meat off the bones. Then put the carcass in the big stock pot with water add onion, celery, carrot and spices. We always include barley, some cut up turkey and sometimes rice at the end. My kids liked it best when I would use the blender to liquefy the vegetables.

Quotes on turkey:

“Turkey, unlike chicken, has very elegant characteristics. It has more of a cache than chicken. Turkey is a delicacy, so it should be presented in such a way. – Todd English

“That’s the ultimate goal of most turkey recipes: to create a great skin and stuffing to hide the fact that turkey meat, in its cooked state, is dry and flavorless. Does it have to be that way? No. We just have to focus on what the turkey is and what the turkey needs.” – Alton Brown

“We should all get together and make a country in which everybody can eat turkey whenever he pleases.” – Harry S Truman
